Located in the heart of Downtown Redwood City, Sushi Shin opened in January 2020 and earned a MICHELIN Star in 2021, 2022 and 2023. Chef Jason Zhan was trained under the master, Hideo Kuribara in Ushiwakamuru NY for traditional Edomae-Style Sushi. He then moved on to work at esteemed Michelin starred restaurants such as 15 East, Kappo Masa, O Ya, and finally returning to Ushiwakamuru NY at which time the restaurant earned one Michelin star.
This discreet nook offers an elegant refuge from the quaint bustle of downtown, and in turn offers some of the best sushi in town. Chef Jason manages the counter with aplomb and no shortage of charm, skillfully assembling a distinctive omakase featuring carefully sourced, seasonal seafood. Guests may select either a standard menu or a premium version that gilds the lily with rarer delicacies. The meal begins with a procession of small plates, which might include unique offerings like tempura-fried greeneye dusted with matcha, or soy-marinated Japanese sea snail, before proceeding to flavor-forward nigiri topped with the likes of horse mackerel and hairy crab.
Sushi Shin is open for dinner Tuesday through Saturday from 5:00-10:00 PM. Reservations may be made through their website one month in advance.
